Culinary Corner, week of June 24 to June 29

Hello! So the summer Solstice has come and gone, and we are now fully immersed in summer. The great news is that here in Colorado the evenings are still cool and the humidity is generally low. In case you haven't noticed, I have become a little bit obsessed with the weather lately and check it several times a day to see what we can expect. Obviously the Tent dining is very weather dependent, and even though we all know it is temporary, it is still a big part of our lives.

We had been planning on moving from the Tent to the fifth floor game room in late June, but are now realizing that the Game Room is nowhere near as ready as we thought it would be by now. The Construction team is giving us August at the earliest, right before moving into the new Dining rooms. Obviously this isn't what any of us wanted, but let's try to make the best of it and enjoy our time outdoors. As far a I know we are still on track to open the new Dining spaces in late August/early September.




Speaking of outdoors, the tent menu looks like a lot of fun this week. Check out the Carved Prime Rib, Salmon Wellington, Colorado Lamb Chops, Tilapia Parmesan and the Pork Ribs. The Wedge salad by resident request seems popular, we will keep looking at it and try to keep changing as needed-- I know that there are some die-hard Cobb Salad fans out there. A resident suggested that an entire blog entry could be assembled about just classic salads and their histories, I think that is a great idea.



Tuesday night's social looks like fun with Quesadillas, Southwest egg rolls and Beef Sliders with Bacon. We are going to do a classic Mojito cocktail to match this one. Mojitos have come in and out of fashion over the years but it is a great drink-very similar to a mint julep really. The Spanish word “mojadito” (meaning “a little wet”) and the Cuban lime-based seasoning “mojo” are possible explanations for the name. Interestingly in modern English the term "mojo' refers to magic or a spell that gives its user power. However it began, the creation of the Bacardi company in the mid 1800s was most likely the cause of its spread and growth in popularity, and then Ernest Hemmingway’s personal discovery of the drink in Cuba sealed the deal for it to become enshrined in our cocktail history. Our Mojito will have white Bacardi Rum, fresh mint from our garden, lime juice and sugar.



On Thursday we will be having various flatbreads, by request, and we will be serving Pinot Grigio as our white wine that day to accompany it. Chardonnay is a very versatile wine but sometimes something different is nice.



Speaking of wine, Tuesday we will be having our monthly Sip and Savor event at 2 pm in the Centennial room. We will be highlighting German Grape varieties, and Chef David has put together a nice menu to accompany them. Check it out at left.



On Thursday is our Food and Beverage Forum at 2 pm in the Centennial Room. Obviously we will be discussing all manner of things but I expect the focus to be on the new dining spaces and what our vision for them will be. Please keep in mind that some details are still fluid as we move forward.
